Also known as Invertase, sucrase is a digestive enzyme. It acts as a catalyst in the hydrolysis process of sucrose to glucose and fructose. It is found in animal intestinal mucosa and yeast. Sucrase is used extensively in soft drinks and many other beverages. It is also used in detergents and pharmaceutical products. Sucrase also acts as an excellent food stabilizer and thickening agent. It is also a great antioxidant and an excellent preservative. Sucrase is also used in baking; hence, the characteristic brown colour of all baked items.
