Belonging to the family of Cucurbitaceae, pumpkin is an herbaceous plant that grows along the ground. Native to Central America and Mexico, pumpkin is rich in vitamin A, vitamin K, vitamin C, vitamin E, Iron, Manganese, Magnesium, phytosterols, and Phosphorous. The primary active components in pumpkin are polysaccharides, para-aminobenzoic acid, fixed oils, sterol, proteins, and peptides. The presence of carotenoids gives pumpkin pulp its yellow colour. Pumpkin also contains polysaccharides, pigments, amino acids, active proteins, and antioxidants.
