Also known as notatin, Glucose Oxidase is an enzyme that acts as a catalyst for the oxidation process of glucose to D-glucono-?-lactone and hydrogen peroxide. It is found in certain species of insects and fungi. This enzyme is known to exhibit antibacterial properties in the presence of glucose and oxygen. Glucose Oxidase is used extensively for monitoring glucose, treating wounds, and preserving food.
